Just purchased two first class Saver Day Passes, now do I need to reserve seats on the trains we want from Zurich to Zermatt?

No, a seat reservation is absolutely optional and not required, especially if you wil travel in 1st class. From Visp to Zermatt a seat reservation is not possible at all.

For seat reservation that is possible for certain lines, how many weeks/months in advance could the reservations be made?

For seat reservations on tourist trains such as Bernina Express, Albula Express, Glacier Express or Voralpen Express and Treno Gottardo, the reservation period is 92 days in advance.

For other lines on which seat reservations are possible, the period is 60 days in advance.
