If I buy a return 1st class point to point upgrade from HB to Bellinzona, can I get out the train at Zug and get a train to Wollishofen (which also ends up in HB) with the same ticket or must I go on a specific route to Hb.

my ticket just says via Gotthard.

Yes, for this specific route, it is possible to change trains in Zug and to continue to Zurich Wollishofen.
