Hello! If I travel from S.Moritz to Tirano with Point-to-Point ticket, do I need to book seats? If it is not a panoramic train I don't need, but trains go every hour and most of them are panoramic, do I need to book seats or there are some usual coaches in those trains?

Yes, the BEX also constitutes of coaches which do not need a seat reservation.
