For routes that show interrupted service, does it mean that the route would be unavailable and we would have to look for other means of transport? Am planning ahead and unsure of what will happen for routes that show that there would be interrupted service between certain stations

As a general saying, there is usually a replacement service, which may incur longer travel times.
In order to give you a better advice, you would have to tell us the exact routing, if already known. Scheduled mid- and shortterm maintenance work is also communicated here: Operations & disruptions | SBB

Dear Roland,
I am referring to the interrupted service between Olten and Bern on 25th March. Would there be replacement service? And in terms of replacement service, does it still mean transport via train?
